As we go through the last few weeks of winter, now is the perfect time to try this Instant Pot Warm White Bean Chicken Soup recipe.

It’s a hearty, yet incredibly healthy soup. This easy Instant Pot soup is filled with superfoods, including protein-rich Hurst’s brand Great Northern beans, carrots, celery, kale, tender chicken breast, and lots of delicious fresh herbs.

Here’s what you’ll need to make this healthy Instant Pot White Bean Soup:

  • 1 20 oz. Hurst Great Northern Beans package
  • 2 chicken breasts
  • 8 cups low sodium chicken broth
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 2 teaspoons fresh rosemary, chopped
  • 1 teaspoon fresh thyme
  • 3 cups kale, chopped
  • 1/2 lemon juice
  • Freshly crushed black pepper to taste

It’s good to cook with beans. Beans are really the perfect protein. They are low in fat and high in fiber, which means you can feel good about serving them to your family.

How to make instant potted white bean soup

ingredients

  • 1 lb Hurst, Great Northern Beans, rinsed and removed
  • 2 chicken breasts, 1 to ½ lb
  • 8 cups low sodium chicken broth
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 2 teaspoons fresh rosemary, chopped
  • 1 teaspoon fresh thyme
  • 3 cups kale, chopped
  • 1/2 lemon juice
  • Freshly crushed black pepper, to taste

Instructions

  • Remove the flavor packet from the beans and save it for later use.
  • After rinsing your beans and removing debris,
  • add the beans to the instant jar and cover them with 8 cups of chicken broth.
  • Make sure your valve is set to tightness and the cover is locked.
  • Cook at high pressure for 40 minutes then release quickly.
  • Remove the lid,
  • add the carrots, celery, onion, garlic, rosemary, thyme, and kale; stir.
  • Place the chicken breast in the pan.
  • Replace the cover and cook at high pressure for 15 minutes.
  • Leave the natural release for 5 minutes,
  • then move the valve to release the rest of the pressure.
  • Remove the chicken and grate. Return the grated chicken to the pan and stir.
  • Squeeze a little lemon juice into the pan and finish with freshly ground black pepper. Serve hot and enjoy!
